Andy- We faced the same difficulty in repairing our 1982 Westfalia: missing thermostat/flaps, etc. You can get the thermostat and cable and through list vendors or VW. The cable-end nut, pulley and rotational bolt were NLA at my VW dealer, but it seems that some parts guys are craftier than others. The flaps, bushings and closure spring are junk yard items. A kind-hearted soul on one of the bus lists sent me a set of all the missing gear, as I couldn't find a set around here. Perhaps another listee has a dusty set of this stuff they can put in your hands. Good for you for getting those! G.
