In my experience, a quart every 500 miles is right at the borderline of acceptability, with 1000 miles being about average and 250 miles meaning rebuild time. But oil is cheap, just don't forget to check it every other fill up! Were the heads really new or rebuilt? How many miles on the rest of the engine? It could be the power boost from the head replacement is causing worn oil control rings to pass more oil than before, or maybe the valve guides weren't replaced if the heads were "rebuilt."
