It's certainly true that the gauge won't read air temperature, but it has been my experience (twice in six years) that when the van had a slow coolant leak, there was plenty of warning due to the rapidly blinking LED which I could hardly ignore while driving.

The last time it happened, I pulled over just after the lamp began flashing to find that that the reservoir was still more than half full.
