Congrats!  Another option might be to find the rare single middle seat from
an '85 westy and modify the floor rails so that you can slide it in and
snug it up next to the existing 2 person bench seat.  Even though the
single westy middle seat is rare, it may not be as rare as the 3 person
middle bench.
