Scorpions! Hmm, a new danger to crawling around under your car.

The sound you described sounds like an exhaust leak, but if it is not it could be piston slap--the skirt of the piston slaps the cylinder wall until it heats up and expands a bit. You can go for a long time with this, so don't worry about it. The increased compression from your head work could make this noise more pronounced. That is one of the risks in rebuilding only the top half of a high mileage engine, the worn parts in the bottom half are subjected to more stress.
