Could it be that the cooling system just wasn't fully purged of air when it was re-filled after the head job (as it were)? Air can remain trapped in the system for some time then finally burp into the expansion tank (BTDT)

That happened to me last December in 40C Deg heat 3000kms from home and caused the coolant light to start flashing.This was after a coolant change,not a head job but same thing.Still,it was something to unkink ones colon given my circumstances at the time. A re-bleeding of the system solved the problem and the symptoms have so far not returned (touch wood)

Hopefully the Kombi gods will be on your side...
