That symptom is almost completely diagnostic of a bad or misadjusted idle switch (on the throttle body). Switch should close at closed throttle and full throttle (if there are two switches, one closes at idle and the other at full, but they're connected to the same wires so the effect is like one switch.

Test/adjustment is in Bentley (don't have it handy). Also in Haynes, but only for the single-switch models ('85-up)

Quick check is pull the wires off the switch and bridge them -- idle should be smooth.
