Ouch.

You have a poor mechanic, I always love the smoke screen of "never used that stuff, must not be any good." Or "Oh, my parts supplier only warrants the parts for six months." Geez, pay a bit more and get quality parts AND stand behind your work.

Clear, understandable warranties in writing are extremely important. You don't have many options other than persuasion, and if that fails pursue whatever consumer protection the provence of BC can provide you.

After many years of DIY repairs along with dealing with repair shops I now only deal with specialists with good reputations for the things I don't do myself. The VW transaxle is one of those things I would only have a specialist who offers a good warranty do.

If you spent $800 US for this job and all he replaced was the pinion bearing you got took, especially if he won't repair it after failing so soon. Having him put in another possibly crap pinion bearing won't gain you much, after a year you will be in the same position.

One strategy you might try is to have him just do the "remove and replace" for no charge and ship the box to Daryl at AA Transaxle, he is not that far away from you. Have it done right this time for $900 and get a three year warranty to boot.
