This question will show my aircooled ignorance, but how do the non-water engines stay cool in such conditions? Seems like even with circulating water and lots of fans, things can get touchy... man, without water or fans, that has to be a real heck of a time...

They manage quite easily, but the heater stops working and you may need a jump-start :-) Seriously, the fan is mounted directly to the back end (back of vehicle) of the crankshaft. The belt drives the alternator and the blower for the heater (yes, it's mechanically driven).
