When pressed, it allows gas to flow to the burner even though the
thermocouple is not hot.  You will never ever ever light your fridge
without holding this button down until the flame has had a chance to heat
the thermocouple (maybe 15 seconds after lighting? -- when the LED on the
panel lights you can let go of the button).
