Adam, I agree it unlikely that having the fridge running on propane while driving is all that dangerous.... but the way I look at is this: why take the risk of having a flame on board? In the event of a collision bad things can happen to either that gas tank or the propane tank... or both. I sure would feel stupid having a flame in that event... especially when the owner's manual recommends turning off the propane when driving... and even more especially when I find my fridge runs just as cold on 12 volt power. It only takes a minute to change over and it saves the propane for when I am in camp and need it most.
