Being in the middle of an engine swap right now, I would suggest keeping it water cooled. The only reason for this would be because, this job is not for the average corner mechanic. To do the job 100%, you must have bolt on parts, or have a good idea of the engineering behind the hole ball of wax. Once the corner mechanic realizes how deep he is in over his head, he will start cutting corners, and you will end up with a mess. Keeping his job as simple as possible lessens this possibility, by keeping it water cooled. Now if you doing it your self, its a different story.
