It's been a while since I've done this. This was Basic Electronics 101 - what you are looking for is a range switch to convert the gage to read 0 - 15 volts or 0 - 1 volt full-scale. Back in the days of coil-wound analog gages, you just applied a little Ohm's law & came up with the appropriate voltage divider to give full-scale deflection at whatever applied voltage you want and used a switch to select between ranges. I suspect that the new digital gages have the divider network in a chip so scaling one may not be quite so easy. Probably take a little electronics trickery with an op-amp rather than digging into the guts of a new gage. If you want to build your own air/fuel ratio bargraph meter with some commonly available RadioShack parts, look for the tech article on www.pelicanparts.com. Use different colored LED's in the scale & tell at a glance where you are air/fuel ratio-wise.
