Folks, I have a Gene Berg oil temp sensor attached to my oil pressure guage. I have it on all my air cooled. When you reach a point where the oil is close to becoming too hot to have its cooling properties, the little sensor begins to ground, and your oil light begins to flicker, telling you to back off the throttle. This simple device costs around $10, and a well stocked VW shop should have it. If not, my local shop does, and I know he could work out a mail order.
