Might want to chase around with both AC and DC meter and check your grounds. Anything at all that moves the LED panel ground positive to the thermocouple output by more than a millivolt or two will light the light. As you've seen, any significant DC load on that circuit will do it. Whatever's happening on the AC side, I'd expect that the LED is actually flickering at line frequency when it's lit for that reason.
