Can't help to much with New Brunswick, but lived for 11 years in Dennysville ME, about a half hour south of Caoais, where I assume you'll cross back to the US to get to Campobello.

Campobello is cool. See the Roosevelt "cottage" then go to Head Harbor. Great views, but probably too early in the season for whales. Hit it at low tide, the only time you can actually get to the lighthouse. On the LA (Lubec America) side of the bridge, don't skip the oxymoronically named West Quoddy Head, the easternmost point in the continental US. Prettiest lighthouse in Maine (IMHO) and a good little hiking trail up along the cliffs. Cobscook Bay state park in Edmunds ME is a decent camping area. Most of the commercial camping areas in that vicinity are cleared grassland with RV hookups. Take Rt 1 on your way down. Lots of nice little coastal towns all the way down.
