I'm sure US coins work in some, possibly even most Canadian meters. You are also right that there is no incentive for Canadian meters to refuse US coins specifically. However there is an incentive for the meter to refuse slugs... meters are no doubt set up to refuse coins of the wrong size and weight wherever possible to ensure that people are paying for parking with real legal tender.
