I am only driver in my home. I did two things to make insurance almost affordable.

My Porsche 911 and my VW Thing are insured for 7K miles / year or less. At the end of the year, I'll be asked my mileage and if it is high, I'll be kicked into a different policy (but not asked to pay back fees).

My Vanagon Westy is insured as a motorhome. The motorhome trick makes the Westy extremely cheap to insure. My insurance agent thought I was wacko but she put it through anyway and it worked. I heard this trick on the internet and it was probably on this list.

I drive the Vanagon the most and it is the cheapest to insure by a long shot.
