Don't know which head needs to come off, but since you asked....

This can be done with the engine in place, but you will find it a challenge! The upper cooling tin will need to be partially removed so you can get to the upper four head studs. You will also need to remove the fuel injection manifold for that side, as well as some of the other sheet metal pieces that may be in the way.

You don't necessarily need to unbolt the exhaust manifold from the head, but this would make removing the head easier.

It's a lot of work, and I would probably just remove the engine first. You should consider getting a Haynes manual. Their 80-83 Vanagon edition is pretty good, and has a lot of pictures.
