I installed two 7" stalk lights ($31/each) on the metal panel at the front bottom of the upper berth.

The electrical wires for these lights run through the inside of this overhead metal panel and then behind the long thin wooden trim panel above the shelf that runs along the driver's side van above the kitchen area.

I also installed using an aluminum plate an 18" stalk light ($42) just aft of the pop top support bars where they attach to the bodywork above the sink.

The electrical wires for this light slip behind the same wooden trim panel mentioned above, meet the wires for the other two Hella lights, and are connected to the van wiring at the electrical connectors hidden behind the trim panel for the existing factory kitchen light.

No wires are visible, all are hidden away so the installation looks tidy.
