The word "cozy" is a subjective term... you'll get many opinions but you will be unable to confirm if their idea of "cozy" matches your idea of "cozy"

You certainly won't die in your Vanagon at 30 degrees even with no heat if you have a good sleeping bag... if you run your heater(s) and pop the top you will loose most of the warmth out the top... if you keep the top down you will be okay... down to a certain point..... you did fail to say how far below 40 degrees you planned to be camping.... I say just go out with a warm bag and plenty of hot drinks and see how it goes... you will learn to calibrate your term "cozy" to a mark on the thermometer :)
