I added one of these to my '82 Adventurewagen (recently departed). I used a low-profile, "dual panel" light that I purchased at an RV supply store. One half of the light had an opague lense for general illumination. The other half had a spot lense to illuminate the engine when working on it. The whole light assembly was no more than 1" thick, and I mounted it on the ceiling directly above the engine compartment lid.

I wired it into the 12V wiring that existed for the rear upper bunk lamp (Adventurewagen-specific). However, if your Westfalia has A/C, there should be a 12V source powering the blower, and you can mount the light underneath the A/C cabinet with wood screws, velcro or adhesive.

You are correct in your assertion: VW should have included a light back there, and having one makes a world of difference!
