Great thread ---- some great ideas out there. I'll throw in a couple of my
favourites that I haven't seen mentioned yet.

1) I clip a cheap plastic paper towel holder to the shelf above the cabinets
using a couple of large fold-back paper clips. It's very handy both while
cooking and for the kids in back while driving.
2) Camping pantry. We have one of those 3-drawer pastic storage units with
casters loaded with all the non-perishable food items. While driving it bungees
nicely (on its side) on top of the stove/sink cabinet. When parked it rolls
around on its casters inside the Westy --- and its top is a handy surface for
cooking as well.
