Definitely low-tech but probably the single most useful thing I've ever added is a little 3-legged stool that I can sit on while cooking, washing dishes, etc. I can reach everything I need but can immediately move it out of the way if need be. I often stay sitting in it while having dinner at the swing-out table rather than squeezing in with my wife on the bench seat.

Got it at REI for cheap: It's just metal legs and a canvas seat. Folded up, it tucks up amid the canvas in front of the latch that holds down the pop-top.
