The engine uses the flow from the heater hoses to tell whether or not to open it's thermostat. A valved 'shunt' may be installed to bypass the rear heater core and recirculate back to the system if you want to have it shut off for summer. It has to do with the design of the engine. The subaru engine is a flat boxer style engine similar to the wasserboxer and as such has the same inherent difficulties in bleeding the system of air pockets. Though that's where the similarities end.
