Chad; I would pinch off the two big hoses, put a catch pan underneath and pull off the bottom thermostat hose. If memory serves me not much will spill out. Do not open the reservoir. If you can unscrew the oil filter without damaging it, do so. But do it after the first step. It makes things a lot easier. Easy on those two small 10mm bolts. I have snapped one off, a VBPITA. When you pull out the thermostat you will probably get some more spillage. If your engine is in good shape I would stick with OEM. Running cold thermostats can cause engine wear.

I made a couple of useful device to pinch off the hoses fairly easy, quick and cheap. The consist of pieces of broom sticks and a couple of long screws to pull the dowels together (hose in between). They work great.
