Personally, I'd leave them there; it's a bit safer. Or at least some of them -- say, for the seats that are used the most often. It helps prevent whiplash.

Some Golf/Jetta owners (I am one) complain about the middle rear headrest, but I personally am mystified. It doesn't get in my way much at all, and it is a safety feature. --
