You betcha, you can spend as many hours at this as you can stand! Just stay away from edges and seams, or you will go through the paint real quick. This is my preferred technique since you end up with a beautifully smooth finish with the correct gloss for a car of this period. Clearcoats are too glossy and too easily scratched, and some of the urethane enamels are too glossy for my taste right out of the gun.
