Go with the one specified by VW, 87 C. Don't be misled by the common misconception that a T-stat rated at a lower temperature will prevent overheating. If the engine is overheating and the thermostat is good, the source of the problem lies elsewhere. The good people who designed the engine do not live in a vacuum, so I am sure the considered all things when they decided to use an 87 C. T-stat. Anyway, I have a vague recollection of studying thermodynamics back in the Dark Ages. Other than the definition of entropy and enthalpy, one thing I recall is that, although nonlinear, there is a direct relationship between temperature differential and heat transfer; the greater the temperature differential, the greater the rate of heat transfer.
