Brian,

One-third of the throttle left doesn't necessarily mean you have that much more power on tap. I know this from driving my former gray market 928. I was over 145mph w/ plenty of pedal left but only a small fraction in added power.

Will you be marketing the gauge faces or are you doing a one off thing? Maybe the ones intended for Golfs and Jettas will work.

You know the safe RPM for the SVX motor, right? Assuming you could find a suitably deserted and un-CHiPped portion of highway, why couldn't you push it closer to the redline of the SVX motor? Are you concerned about the engine or the stability of this aerodynamic brick which incidentally will work against you even more when you raise your speed. First step would be to put those little spoilers of each wiper arm if you haven't already done so = ).

Inquiring minds want to know.
