I agree that the one fluorescent fixture leaves a lot to be desired, in the stock location in my Westfalia. Led lighting is too direct, and expensive, and I wanted lighting up in the upper berth also. I was cruising Home Depot one fine day, and landed on the solution. I found 9" battery powered fluorescent fixtures, that attach with velcro, and also have a provision to be powered by a 110 converter. They were only $9.00 per light, and I hung one in front of the rear over hanging cabinet, and the other up on the bottom side of the pop-top. In combination with the original fluorescent fixture, I couldn't believe the light these lamps threw----and reasonably priced too. And they are mobile---just tear them off the velcro, and they go where you do, if the situation presents itself---- I'm not sure these light are cool, but they sure do work good.
