The mountains are probably a little past the peak, but I think you could
find what you are looking for at any of the national or state parks in
western nc. There are many places in the Piscah National Forest area,
like the Shining Rock Wilderness.

Also, you probably have some pretty spectacular places in GA. Check out

and look up Cloudland Canyon Park. My cousin who lives in Atlanta swears
this is the place to go. There has been a mid winter bus camping trip
there in the past. I have not been there yet but the pictures on the
site are incredible.
