I don't know about a middle seat but my newly purchased van has a 5th seat which faces backward. Much to my delight I did not know the camper would have this option and I know they are quite rare. When I get my digital camera back I will send you a photo if you like.

I plan to just use folding chairs for extra seating. Not so secure for driving but doable.
