Where is your Temp gauge sensor mounted? If this is an actual oil temperature, be happy. You engine is running well and your are not pushing it too hard. If your sensor is mounted on a tee with the oil pressure switch or gauge, you are not getting an accurate reading.

What should the operating oil temperature of my aircooled engine be? On the highway, mines's running about 80 celsius. That's abour 175 fahrenheit.

Seems low to me, but i'm not sure..
