Three fingers is about how much Scotch I like with the ice, but it seems a bit much for the overflow tank. If the system is properly bled and filled to the max line, when the engine gets hot, the coolant expands and the expansion tank cap opens and allows overflow into the other tank. When it cools it should be sucked back into the engine. My '90 Westy, with 140K miles, only expands about one finger. Did the shop replace the gaskets that prevent the combustion gases from getting into the coolant? Sorry, I don't know what they are called, but someone else will let us know.
