I am a vegan. That means I am the strictest of vegetarians, no animal products at all, including dairy and eggs. The longest I've camped in my van was 7 days, and I carried rice, beans, tofu, peanut butter and jelly, veggie bologna, veggie sausage, flour to make biscuits in a frying pan,baking potatoes, onions and corn for the camp fire, powdered hummus mix, bread and fruit along with some Indian boil-in-bag dinners I get at a health food store. There are also vegetarion dehydrated meals that I always keep in my van, and veggie "Ramen" noodles. Also try veggie cup-a soups. There's nothing better than pop corn popped over a fire.

Be careful about eating sour tofu. It'll make you hurl to no end. I often make scrambled tofu for breakfast when camping. Actually I haven't done that since that last sour tofu incident....

Yes, it is hard camping with non-veggies. A veggie camping event would be great.
