I would use the Carat, and attach a table hookup to (C shaped channel material) the outside of the van and mount the stove on it (or use a roll away table). That way it is removable and stashable. Then buy a good 12 volt fridge/freezer unit to fit under the seat. That way you can remove it too. Unless you only will use the bus for camping trips (not a daily driver) the joker interior might be justified as too much.

Note: somewhere along the way I have seen these freezers on the web, also we own a 1980 Westy and a 1995 Eurovan Camper. I wish the Eurovan was a Weekender. That way it would be more suitable as a daily driver.
