Hey David --- bet you'll get a lot of conflicting views about this. My vote is go the full Westy route. I'll not that my Westy is my daily driver. First -- I just love the fridge and stove. Especially the fridge. It is so nice to not have to fish soaking food items out the water in a cooler. All those cabinets are great too. We leave ours completely loaded for camping all through the season. This means all camping clothing, nonperishable food items, dishes/pots/utensils, toiletries and camping gear --- everything. So when we want to go camping it's a matter of throwing some stuff in the fridge, the canoe on the top and the dog in the back and we're gone. To me the weight that I tote to work every day is worth making those weekend getaways fast and easy --- and very comfortable once you get there.
