He made a couple of stops on the way home and nothing else happened.

You should always stop as soon as possible and check your oil if the
light comes on, it could be too late after a couple of stops.
I'd first suspect the sender as defective and then check for bad engine
grounding or loose harness plug in on the instrument cluster.
