Rooftop AC units run on 110v AC. If you got an 120 v generator you can run them when you're driving. They require 15+ AMPS so you would need about ten 12v automotive deep cycle batteries to run one through an inverter http://williamwareagency.com/forsale/stanvan/ac_unit.htm Dirt simple 120v AC solution.
