Is it worth replacing the motor mounts?

Examine them, poke the rubber with a screwdriver. The rubber on all of
them should be firm with no tears or separations where it is bonded to
the steel.

is there anything else I should be doing now that I have all these pieces
on my garage floor?

Remove everything that your rebuilder isn't going to furnish on your
rebuilt engine.
Be very careful to keep up with all nuts, bolts, spring washers etc. etc.
If you're going to ship the engine, locate a couple of used pallets if
the approximate size required to ship your engine. Mount your engine on
one pallet and block it so it doesn't rock and roll. Sandwich the other
pallet over the top of your engine. Tie the engine firmly with straping
of any strong material.
