When I had a tavern, the refrigeration men would set up the beer coolers at 36-38 degrees F. They seemed to have intimate knowledge of their field of endeavor since the good ones were invariably also alcoholics. Occupational hazard, I guess. A guy I knew who ran a place which had been owned by his family for more than a hundred years once told me that the ideal temperature for bottled beer is achieved by chilling it in a tub of ice.
