The water is 98-100 degrees Celcius, depending on the barometric pressure, it's well above 87. The time taken to fully open close seems a little long at over 2 minutes, but does it start to visibly move open within the first few seconds? It should react to the temperature it is immersed in quickly enough when dropped in from room temperature that you actually see it moving. Does it seem to hold the engine at a constant temperature while driving? I suppose you wouldn't be doing the off-vehicle tests if everything worked perfectly, but was it seeming slow on vehicle?
