The coast of Oregon is spectacular. A drive between Wheeler and Cannon Beach is not very long, but really captures the flavor of the coast.

East of Portland, via Hwy 84, is the Columbia Gorge, which Eric mentioned. The most visited place in Oregon is Multnomah Falls and it is a must-do. http://www.hevanet.com/dariusg/mult.html You can (should) get off the fwy and take the scenic hwy. Let me know if you want any more particulars.
