My friend Stephen did this with his '82 westy.

He cut the luggage rack and subsequently lost a lot of rigidity from same, so it is practically useless for cargo.

But the sunroof overhead is wonderful. He used one of those glass pop-up types that can be completely removed. Its fun to stand on the pass seat and poke out the top of the van as it dives along.
