To each his own, but the advantage of the thermostat is that it is automatic. You don't have to worry about either running the fan(s) all the time or having the refrigerator overheat.

I replaced my noisy single fan with two muffin fans, using the stock thermostat, and have been quite happy.

If you like the control of a switch, you have lots of options.

Wire one fan through the thermostat and have a switch on the other.

Purchase an additional thermodisk with a slightly higher temp rating than stock. Use it to control the second fan so it will only come on at the higher temp.

Run both fans through the stock thermostat in parallel with separate switches, so you can can choose to have one or both come on when the temperature rises. Remember to turn at least one on when you start the fridge.

Lots of other combinations. Thermostatic control of at least one fan will probably make you happier in the long run.

Are you also planning to have a tiny muffin fan inside the fridge? Good time to do it when you have it on the bench already.
