Would you not need the headrestraints pushed up higher that the removal of the clips will allow? The restraints are supposedly designed to catch the "crown" (the back) of your head in the event of a rear end collision. If you are as tall as you describe, I can imagine that the back of your head may catch the restraint too low for safety's sake.

BTW, you need not remove clips to make the headrestraints easier to remove. Just go to your VW dealer or to a junkyard. Pick-up some headrestraint clips from the rear bench of a late model Carat. The clips on those seats are extended in one side and can be equipped with a small plastic finger shield. Makes them easy to unclip for headrestraint removal.
