Get a set of "numbered" drill bits and use the bits to determine the size of the original jet. Get a propane torch and solder up the hole in the old jet. Drill out the soldered up hole to the new smaller size. Use a dremel or similar high speed tool as the drill.

I've never done this with a Dometic fridge, but that's how I rejet furnaces, old cars, motorbikes etc.
