What you're discussing here is Pin Point Lubrication. The actual contact area of the drive balls is minuscule in comparison to a wheel bearing, but you've got a lot of lubrication flow in a CV joint. Most CV's that I've found to be defective were so because the grease hardened and didn't reflow, hence the need to re-lubed about once a year and check your CV boots often. The CV will not hold 3 oz of grease, the rest just has to be packed into the cups on the outboard end and mother nature distributes and redistributes it with every RPM and Bump in the road.
