What about stopping/camping in Big Sur. That is some beautiful camping. (Although it's been about a decade since I camped there-I expect that it is still great.) Also, there are some good spots north of Santa Barbara (Jalama, Refugio, El Capitan) and some south of SB (Ventura, Carpinteria, Oxnard, Malibu,etc.) Then further down, Orange County has some okay places. (We recently camped at San Clemente. It was okay, but once was enough. Lots of Big Rigs and pretty far from the beach.)
